Christmas Eve meals

Sure I do two.
But unfortunately I can’t tell you exactly what I do because I’m a shocker when I cook for not paying any attention to what I’m doing, It tends to involve tasting and adjusting it multiple times and during that process I tend to be off in lalaland 😂

So these are the links to the base recipes. Then I’ll taste and add repeatedly until I hit the right spot.

Black Bean Sauce

And this one

Beef in black bean sauce

My sons have bought me a kitchen camera because whenever they say wow, what did you do to this? I always reply not sure. I can tell you most of the ingredients (by what’s left out on the side) but as to how much of each I really don’t know 😂
I should try and set up that camera 😂
I cook ike that, so no worries...
I remember a friend of my mum wanting the recipe for some Indonesian dishes.
My dad mostly cooked so she ended up on a chair in the kitchen, trying to write everything down..
"What did you just put in? Oh a bit of ketoembar*.. How much? Yeah well, just a bit...
She sort of got there i the end, but she had to stay sharp!

*Coriander seed

You should!

In USA, most people do either lasagna or roast beef, I see the weekly ads feature more roast beef on sale so I know,
In my household, we have mostly French, Italian, and English. We cook mostly the same food every year, so it becomes a tradition.

Lasagna surprised me. I mean, it seems like a rather everyday dish for a festive occasion. Not that I am any good at making lasagne ( probably because I don't much like it). I know lots of folk love it though.

Also, I'd have thought roast beef would be for Christmas day?

I think I understand from their point of view is that nobody wants to cook, they can prepare the night before and put the dish in the oven for lunch on Christmas day.

I reread the title for this thread, it’s about Christmas Eve, and I say in my household they eat whatever they can find in the fridge, most likely very lite stuff because I will be busy making desserts for the following day.

Have you tried the fermented black beans?
I think they're called "tau si"; I once went to the Chinese market and asked for tau si. They all laughed (probably because I don't speak Cantonese) but directed me to the right place.
I could eat those things straight from the bag. Utterly delicious.

I’ve never eaten them straight from the bag. Interesting 🤔
