Cheesecake filling
4 8-ounce packages cream cheese, softened and whipped
3/4 cup sugar
3 tbsp all purpose flour
2 eggs
2 tsp vanilla extract
2 tsp ground cinnamon
Cinnamon filling
2 cups dark brown sugar, lightly packed. Type of brown sugar doesn't really matter though.
5 tbsp ground cinnamon
3/4 cup flour
9 tbsp butter, melted
Icing
2 tbsp cream cheese, room temperature
1 cup powdered sugar
4 tbsp milk
Heat oven to 325 f, first make crust and press to springform pan (I used a 10in). Bake crust for 10 minutes or so. Prep both fillings in separate bowls. Layer them dropping cinnamon filling on crust then cover with cream cheese. Repeat until finished. Bake cheesecake at 300 f for about an hour. Let cool before you apply icing.
Note: if you want more of an icing and less of a glaze you could add more sugar or use something thicker than milk.
I'm posting this for my son, Jake. He is the Cheesecake connoisseur/baker in the house. I should note that for his ground cinnamon he used 5 Cinnamon sticks.
