Cooking For a Crowd

[bump, I hope this is okay?]

I'm so nervous now!

I've NEVER cooked for more than say, 6 people before...

Our Community has a once a month "Grub Club", but I've never participated before, until now.

The theme for tomorrow evening is Finger Food... the first thing that came to my mind was, Spam® Musubi.
I was sitting here at my desk and a thought popped into my head, "maybe you should ask the hostess how many folks will be attending".
WOW!!
"It could be 20, it could be 30, it just depends", was the answer that I just got.
Well damn, I better get my act together, seeing as I have to take DH to two appointments in the morning.
So, I've got a pot of that ever present steamed White Rice going; I've already fried off two cans of lower Sodium Spam®; I have all of my equipment laid out on the huge kitchen island/counter ready to get into action.
Did I say that I'm nervous!!!?

I think that I would suggest to the hostess for future club meetings that RSVP be by a certain date so that everyone has that number of guest in mind in order to have enough to share with the entire class, don't you think?
 
OKAY!
*phew*

Got 8 cups of that ever present steamed White Rice cooked
Pan fried the 16 slices of Spam®
Cut up the Nori Sheets into 32 strips
Found a "Hawaiian Themed" serving tray, gave it a good wash & dry
All of the necessary hardware out, washed and at the ready

So all that I'll need to do tomorrow afternoon is nuke the Rice a bit, heat the Spam® back up with some Teriyaki Sauce and assemble.

Professor Bing in my case, said that Spam® Musubi and sit out at room temperature for up to 2 hours, safely, so I'll need to time it just right.

I did a trial run making musubi in my new mini loaf pan to gauge how easy this is going to be.
The first pot of Rice was, meh, not really to my liking but I figured I should try.
DH gave it a thumbs up and said, "these folks are all from the Mainland right? How are they going to no the difference between cooked Rice you like and what they make at home? It's fine! You're being too critical of yourself".
 
You're going to do just fine. You've done all the right things so far: selected a dish you know how to make backwards, selected a dish which is delish, asked how many guests there will be, done a trial run...now you just have to cook and assemble. Don't worry about how long it's going to sit out there; worry about how long it's going to take you to prepare it first. You don't want to be frantically assembling 20 musubis at 6.30pm.
Go, Girl!!!! You're going to knock them out!!:bravo::bravo::bravo::bravo:
