Recipe Creamed Spinach

Leans towards sweet but it's really good!

Ingredients:
  • 1/2 stick of butter
  • 2 Tbsp flour
  • 2 Tbsp canola oil
  • 1/2 cup half n half
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 boiled egg, diced
  • 10 oz bag of spinach, cooked
Method:
Melt your butter and combine with the canola oil and the flour. Cook until it just comes together to a blond roux. Add in your water, half n half, and sugar. Stir to combine and cook until it starts to thicken.

Mix with your cooked spinach and diced egg.

Well it's easy enough to omit the SUGAR and still be quite delicious! I'd just add a few cloves of roasted garlic and be quite happy!

Edited to change spinach to sugar. Oops.

That's the only way we ever ate spinach by itself. Omit the sugar and it can go in any flavor direction. Good idea with the garlic. When I make it again I'll go with a bulb of my Purple Creole.
 
Do you like mustard greens? I had found a recipe a few years back for mustard greens cooked with garlic and cream then eggs in them, kinda like an eggs in purgatory style. Used bread to sop it up. It was really delicious.

I do. For some reason they're harder to find than collard greens and I've always got collards in the freezer. This fall I'll be planting some mustard greens since it's currently almost $4 for a bunch. This is supposed to be cold hardy.

I never liked spinach as a kid.
Then at university, it was the turn to cook for someone and she made spaghetti with creamed spinach, mushroom and bacon bits
I took the first bite very reluctantly, then wolved it down :)
I've since changed the recipe to onions, garlic, bacon, a little chili, mushrooms and "creamed" spinach.
Since I hardly ever have cream, I use milk and boil it down. Comes close enough
 
I like to cook some chopped onion in butter over low, then add some garlic right before putting in the spinach.

When I had my little garden and had planted collard greens, we ended up eating a lot of creamed collard greens, using them like cabbage to make stuffed collard green rolls, and any other way we could figure out how to use them since it was just the 2 of us. Same with Swiss chard.

I keep adding 100 ft.^2 to my garden each year and it just isn't big enough. I just harvested some shishito peppers which I haven't had since leaving Las Vegas in '21 and after eating one off the plant it's like I need two rows of these... 😁
