Cucumber sandwiches

Strange though that something like pineapple [ which was also very rare and expensive ] didn't also become a 'sandwich' for the wealthy tea table
I'm pondering on the concept of a pineapple sandwich. Why not? Its a fruit, like the cucumber. Perhaps its for the same reason we don't have orange sandwiches (unless its marmalade) or mango sandwiches (unless the mango is pickled and accompanies cheese or meat). However, pineapple jam has been known to find its way into an occasional sandwich of mine.

Tomatoes, of course, also a fruit, are quite often found in sandwiches.
Pineapple Sandwich
Ingredients

1 (6 ounce) can pineapple slices
4 slices white bread
Miracle Whip/Cream

Directions
Drain pineapple well.
Put Miracle Whip on bread.
Put pineapple slices to cover one slice.
You have a sandwich.
Eat.
 
I enjoy cucumber sandwiches. They are a nice addition to other finger foods when serving light fare for a party or brunch. They are perfectly simple to make as well. I like to use cocktail rye with a dab of cream cheese, sprinkled with a bit of dill weed and seasoned salt. Top that with a slice of cucumber, and serve them open-faced. They are pretty and tasty.
