Looking for ideas for the recipe challenge, I came across Khai Jiao (Thai-Style Omelet) I didn't have any fish sauce in the fridge so decided to try the technique anyway.

I beat one egg for a couple of minutes.
Added salt and pepper.
Heated a large saucepan with 3 inches on oil.
Once oil was really hot I poured in the egg mixture and turned down the heat.
The egg fluffed up. Turn over after 30 seconds and leave on the other side for 30 seconds
Drain and eat.

I found it very light and fluffy, but also crispy. It was also but a bit oily. Maybe drain on kitchen paper next time.
