Do you use the heel (bread)

I've also always known it (and the outer) as the crust. and I'm not especially keen on it unless it is same day baked fresh. hubby will happily eat it so I usually let him. (I struggle to swallow anything unless it is soft and moist hence why soups, stews and casseroles feature heavily in our meals).

in this house, and hubby's family home, it also gets called the end piece
 
In a word, yes, mostly use it as any other piece of bread - toasted or not. Also give it torn in pieces to the dog - she loves heels. I have to admit, I sometimes throw the heels out.

My wife usually discards the heel (or as we call it in Jamaica, the "bread-end").
I share everyone's sentiment that it holds its structure better than slices when it comes to piling high with toppings. I will however discard the heel if we're talking about stale sourdough or baguette: so hard to chew!
 
Everyone leaves it and we throw it out. A waste I know, but I do not make bread crumbs nor do I ever freeze them.
