A glorious mess of strawberries, cream and meringue. The twist here is that the strawberries are steeped in amaretto liqueur. Quantities of each ingredient are a movable feast but I make suggestions below (no two recipes for Eton mess are alike).
Ingredients (for one large individual serving or two smaller servings)
8 strawberries, halved or sliced
2 tbsp amaretto
150g of crème fraîche
A handful of roughly crumbled meringue
A few fresh strawberry slices to garnish
Strawberry dust to sprinkle (optional)
Method

Method
- Place the halved strawberries in a bowl and add the amaretto. Leave to steep for up to 12 hours. Half an hour will suffice,
- Drain the steeped strawberries (reserve the liquid) and mix with the crème fraîche and meringue.
- Pile into a serving bowl and top with a few fresh strawberry slices. Poor the steeping liquid over the top and sprinkle with strawberry dust.
