Favorite Carnival/Fair/Festival Foods?

Back when I lived in California, the state fair always had big chunks of artichoke hearts breaded and deep fried. Pure junk and absolutely delicious with a squirt of fresh juice from a lemon wedge.

That sounds rather good to me! Artichokes are low calorie and contain Vit A, C, calcium and iron - so its not a complete junk snack.
 
We have a winter agricultural fair - I try to go every year (although it was cancelled in 2020 and 2021 due to covid) to watch the horse show.

My must-eat every year is the hot apple dumplings. Gotta get them with the works (ice cream and caramel sauce). Soooo good and gooey.
 
These are my favorite fun fair treat, as there are barely any others these days because Dutch people skimp on food. I'm an exception unfortunately.
