Favorite Pickled Products?

Actually, the recipe we most often use calls for a bit of sugar, some black peppercorns and a tiny dried hot chile or 2 as well.
 
My curried pickle onions are very popular among our friends and family. I make between 30 to40 kgs a year.

What do you add to them? For me, it's sugar, salt, peppers, apple vinegar, and turmeric. I don't think I make quite that much, but it's still quite a lot, and I'm really the only one eating them. I just made some last night, with red onions...the color is a spectacular sunset pattern, which I think will probably fade as it continues to settle in the jar.
