First Jars of the Season

I usually resize in paint shop to 650 X 458 pixels approx.

My connectivity is poor enough that I get that parsing error if I try to upload the typical 3.5 meg file so I shrink them down to at most 300K prior to starting the upload. That still takes a minute, literally. 🤬 ATT...

Did you use "raw" tomatoes or did you (partly) cook them?
Anything else in there?
Boiled for 5 minutes before putting in the jars. Preheating them drastically reduces the needed time at pressure. For my pint/500ml jars I added 1/8 tsp of citric acid and 1/4 tsp salt before putting in the tomatoes and juice. The citric acid for pH and the salt for flavor.
 
Now I've made several jars of a chipotle mix; tomatoes, onions, garlic, corn, chili's, smoke, and some salt. The usual with the citric acid.

If they're gone by June then about 6 weeks of no tomatoes. This past year it was about 8 months! 👍

They don't eat much beef which is good since it's so expensive. I feed them like Pippi by alternating the proteins. Beef, chicken, pork, turkey, ham etc. Have to work some fish in there...
