Method
  • Peel and trim the potatoes into a column or barrel shape.
  • Heat the olive oil in a large sauce pan and brown both ends of the potatoes.
  • Add the stock, butter, garlic and sage and bring to the boil. The stock should virtually cover the potatoes.
  • Season and simmer for 40 minutes or until the potatoes are cooked through.
 
They really look so delicious. Fondant potatoes are one of those things that sound deceptively simple to make. I still haven't succeeded so I'm impressed. Its a classic and classy way to cook potatoes. :hungry:
