Recipe Fried Kibbe

Ingredients: ( makes 10-12 kibbe)
1 kg minced beef
275 gms bulghur wheat ( the finest grade possible - here it's branded #1)
1 1/2 tsps salt
1 tsps black pepper
1 tsp allspice*
1 tsp cumin powder*
1/2 tsp cinnamon powder*
1 onion, coarsely chopped
1 onion, finely diced
50 gms pine nuts
2 tbsps olive oil
(* Alternately, add 4-5 tsps of baharat spice)

Method:
  • Soak the bulghur wheat in water for about 30 minutes. Drain and squeeze out the excess water
  • Mix 70% of the meat with the coarsely chopped onion, 1 tsp salt and 1 of pepper. Mix well together then blend to a fine paste and set aside.
  • Fry the finely diced onion in the olive oil and, when soft, add the pine nuts, the rest of the beef and the additional spices. Cook until the beef is browned, then set aside.
  • Take an egg-sized piece of the blended beef mixture and, well yes, make it into an egg... poke a hole in one end with your finger ( or flatten it out into a circle) and stuff with the browned beef/onion/spices/ pine nuts mixture. Seal the end and set aside.
  • Do all the blended beef mixture like this.
  • Deep fry the kibbe in hot oil for about 10 minutes, until browned all over.

Are these also made in Armenia? I had a friend whose mom made something like this. They were so good. She didn't speak english very well and didn't have a recipe. She just made by sight.
