Apparently Moose isn’t farmed because they have a propensity for aggression when they feel threatened.
So I guess the only moose you’re going to get to taste will be the wild stringy over-muscled type.

Possibly. Never had moose. Elk flavour is typical wild venison. Very lean. Not overtly gamey. Also, game meat is typically not hung here, the way it often is in the UKWow! How does that taste? Something like moose?
A friend in upstate NY went on a hunting trip recently and bagged a moose - they're huge!

I like Bison meat, I buy ground Bison meat regularly, I prefer this meat over regular ground beef. I also had Bison steak from one of Turner’s steak house, they were very good and tender.

But I had buffalo and I imagine they may be similar

Buffalo is too tough, in fact people don't eat them even where they are from.
Bison are farmed (as they almost extincted the wild ones) Farmed bison is really tasty but fattier than wild game.
Never had wild buffalo, but have had other wild game from that way. Elk is very similar. Would make good biltong!

We do here in Africa (cape buffalo) , and it's eaten in Indonesia as well (water buffalo)

I know in South East Asia they don’t eat them, they are too tough. They are used to farm rice.

Indonesia is part of SE Asia, but different in some ways as they eat a lot of stews.
Rendang was originally made from buffalo meat.
Besides, even though most water buffalo are used as working animals, they will be eaten when they get too old. They are not left to perish.

Never heard of water Buffalo meat ever. Some parts of Asia are more plentiful of other protein(like fish) than others, why eat something so tough.
But I don’t claim to know every country in Asia. I would assume the Mongolian people would eat them.
But some fruit/vegetable that people in Asia eat and I never heard of them until I watch their youtube.

Water buffalo's are those working buffs
You won't get a cape buffalo doing the same.
Almost similar to the elephants. The Asian elephantis quite often used to work, but don't try the same with our African elephant
