Green peppercorns

To me, the green peppercorn sauces I get when we eat out have a slightly more sour taste than the black peppercorn sauces I get, which have more sharpness or bite to them.

Might be because they are using pickled green peppercorns - so the sourness is the brine/vinegar? Well... perhaps.
 
I would generally at least "crack" black peppercorns. Maybe I'll try that with green ones next time.

Last night I made a prawn curry (sorry no photos). I put a good amount of fresh peppercorns in the sauce and then blitzed it with a stick blender. They seem to work well with the other curry spices.

Photo quality is fine! How lucky you are to have such things in your garden. Do you use them in your cooking?
Tbh we don't actually use the green ones. We use black pepper.
Green fresh peppers are sold to wholesale buyers who in turn export them. We dry some for our consumption. :)
But black pepper is only used in cooking certain kinds of food such as meat. We normally use chilli peppers.
I must try a recipe for green pepper sauce shown here :D
