From Prince Edward County in the province of Ontario. I'm a retired chef living in a rural tourist community of mostly wineries, breweries and artists. Still have my hand in a few restaurants here, helping mostly with menu development and I do a few catered jobs a year. Hope to make a few friends here and hopefully add some value. Cheers.

Thanks Morning Glory. My basic training was classic french which is a good base simply because it translates into a good understanding of cooking in general. I have a very good understanding of Italian and a few other Med cuisines. Asian foods in general, Middle Eastern, some Mexican and south American. Basically I strive to represent each cuisine to be as authentic as I can considering I haven't actually travelled or cooked in all of these countries, most but not all. Canada doesn't really have a cuisine other than a few local gems like poutine and tourtiere lol and of course Canadian bacon which we call peameal and maple syrup.
 
Picton. Love the Ottawa Valley. I'm planning a 2 day trip on my motorcycle this summer if we ever open up again.
It's a lot like where you are living now...Still has a lot of rural life style....
