Thanks Morning Glory. My basic training was classic french which is a good base simply because it translates into a good understanding of cooking in general. I have a very good understanding of Italian and a few other Med cuisines. Asian foods in general, Middle Eastern, some Mexican and south American. Basically I strive to represent each cuisine to be as authentic as I can considering I haven't actually travelled or cooked in all of these countries, most but not all. Canada doesn't really have a cuisine other than a few local gems like poutine and tourtiere lol and of course Canadian bacon which we call peameal and maple syrup.Greetings from Maidstone in Kent, UK and welcome to CookingBites
