Recipe Ham on Cheese on Toast with Anchovy Relish

I used a wonderful and historic British product known as Gentleman's Relish to make this. Its essentially an anchovy butter which is more anchovy than butter. The recipe is a secret! I've included a home-made version in the recipe here.

Ingredients
Slices of bread
Thick cut ham slices
Slices of a good melting cheese
Anchovy relish
Aleppo pepper to sprinkle

Method
  1. To make our own anchovy relish mash together an equal weight of drained tinned anchovy and softened butter. Add cayenne pepper, ground mace, black pepper, ground cinnamon and Worcestershire sauce, to taste. This will keep in the friidge for several weeks. You can also roll it in clingfilm into a log, freeze it and cut off slices as required. Excellent with steak!
  2. Lightly toast the bread.
  3. Spread anchovy relish on both sides of the ham.
  4. Place ham on toast, cover with cheese slices and place under a hot grill until the cheese is melted.
  5. Sprinkle with Aleppo pepper and drizzle with a little Worcestershire sauce.
