Highly restricted diet suggestions ?

I don't eat meat or dairy but i eat some fish ( not tuna) and eggs, wild prawns, i am also still on a type 2 diabetes busting diet where bread, rice, potatoes, pasta are an absolute minimum, i also have no interest in cooking now as I dont really enjoy food anymore , I am just eating the simplest things to maintain health.

I live next to a free range egg farm so breakfast is covered

Anyone got any suggestions of low carb , no sugar, quick meals ?

Its sad to hear you have no interest in cooking and don't enjoy food at the moment. That makes it tricky to suggest things.

Do (can) you eat any other proteins such as beans, chickpeas etc.?

I am vegan pls eggs from my own chooks (and from the UK) - I have a severe allergy (anaphylaxis) to dairy protein. I am also trying to keep my weight down though not for diabetic reasons, but for a bad back (spinal deformaty). I think your diet is less restricted than mine is, but I do love vegetables and do make my own alternatives. I am also happy to cook, which is possibly where your issues lay?

Have a look at protein pasta, it is also called pulse pasta, or gluten-free pasta. It is made from lentils and or peas or chickpeas. It contains protein instead of empty carbs, but it allows you to have many of the pasta dishes that I find I often want. It is readily available in the supermarket and can easily be made into most normal pasta dishes - they are quick and easy and switching the pasta for a pulse/bean/pea is a healthy switch. It is marginally different to normal pasta, but not overly so. The main trick is learning to cook it so it does not disintergrate. They do a variety of different colours as well, (from different pulses).

Also things like transparent or clean noodles are actually made from mung beans, so you could include those and have noodles with something that takes your fancy,

All of the rice I eat - when I eat it is brown rice, so I often eat brown basmati - though usually cook 1 portion to serve 2 people. I think portion sizes are often a problem nowadays. Brown rice, is the equivalent of wholemeal bread, as I am sure you are aware. It takes longer to disgest, so you don't get that blood sugar hit all in one go which is why the processed carbs are so bad for you. I am sure you know this.

Can you tell us what sort of things you like or want? Morning Glory is very creative and used to cater for a vegan, and as I said, I am vegan plus eggs and reduce my carbs nowadays. If we know what you are longing to recreate or craving, we can help find ways to acheive that.

I have no dietary issues at all, so what follows does not come from experience

If you don't feel like cooking at all, maybe look at take away meals you can get near you for a couple of days in the week.
Then a little effort to cook on the other days. And maybe batch cook a bit and freeze portions.
Stir fries are quick and a lot of soups require little attention. If you make the soup a bit thicker, you got a stew
Tofu & tempeh are good in a lot of stir fries.
Pulses are quite essential if you are vegan, but good anyway
