I thoroughly recommend using latex gloves when handling fresh chiles.
Ingredients:
453 gms (1 lb) mixed chiles
10 cloves garlic
100 gms (about half a cup) onion
1 tbsp olive oil*
188 gms (¾ cup) honey
350 mls (1½ cups) vinegar - I used equal parts of white vinegar and white wine vinegar)
1 tsp salt.
* The oil will potentiate the heat of the chiles

Ingredients:

Method:
- Remove the stalks from the chiles and wash.
- Peel the garlic, and roughly chop the onion.
- Put all the ingredients into a pan and bring to a boil. Put a lid on the pan, lower the heat to medium-low and cook for about 10 minutes.
- Put the contents of the pan into a blender and blend until smooth. Bottle and enjoy.
