Hot Ones Challenge, Family Style

Good morning,

For reference, here is an youtube episode of the hot ones challenge. I'm tweaking it to fit what I want to do to surprise my DIL.

Several times over the last year or so my DIL/Senika has brought up doing the hot ones challenge. I ran it by my son. He thinks it is a great idea. I am going to host a surprise hot ones challenge, family style. My oldest will be in town in two weeks. I am going to try and schedule it while she is here.

I have ordered the S27 hot sauce line up. I am going to research some fun, deep'ish, family bonding questions that we can all answer.

I will probably use chicken tenders. I am still working out the details on how I will set it up for 5-7 of us to complete the challenge.

I would love to hear your thoughts on this. I am open to any suggestions. I am also open to any questions that can be asked.

I plan on having several cooling agents available, milk, water, ice cream, ect......

The goal is for this to kind of be a "surprise" Hot Ones birthday celebration lol.

I will print out 40 questions (we are still determining the questions). We will have two, twenty sided die. I will eat a wing, roll the die, then answer the question that matches the number. We are adding this to the event because my DIL is a huge die collector and D and D fan!

I asked AI for some questions and here is what I have tallied so far. If I can come up with enough questions, I am leaning towards each of us answering one question per wing, but randomly drawing the question.

I am probably being stupid but what is the point of the questions? I mean, everyone can answer them. They are not quiz questions. So how does answering the question relate to whether or not you sample a hot sauce?

I would never label you as stupid. Did you watch the youtube episode that I posted in the OP? That will explain it a little bit.

There are 10 levels of heat. Each sauce is hotter than the one before it. As you progress through the wings you are being lightly rattled by the heat of them, which can cause you to be a little more vulnerable as you answer the random questions that you are drawing.

Ultimately, the point of the "event" is to have fun as a family, and maybe learn a little bit about each other. Could it be done without the wings and the hot sauce, sure, but it is wings! so why not add them to the challenge lol.

The "Hot Ones" challenge runs for 27 seasons. It is very entertaining. My entire family is a fan of the show.
 
That's a fantastic idea; as long as there are several chileheads around to taste, and it seems like you've nailed that one.
When I started making hot sauces back in 2004, my first complaint about commercial sauces was precisely what Charleze Theron explained: all heat and no flavour. Therefore, I tried to add real "flavour" to the sauces by combining the chiles with herbs, spices, fruit, onions & garlic, etc., so they didn't just "burn" but also tasted good.
Another thing I tried to identify was the actual flavour profile of each different chile. There was no sophisticated wine-tasting descriptions ("tannic, with notes of sweet berries, oak and a touch of leather" :laugh: ) but there were 5 categories: citric, floral,freshly cut grass, chocolate, fruity, which kept repeating themselves over and over again.
Other things I discovered about commercial brands were (1) too much vinegar (2) too much thickening agent ( sometimes agar agar, sometimes pectin) which made the sauce gloopy (3) too much sugar or garlic - a fairly common mistake (4) an excess of preservatives. Sodium benzoate is a common one and I swear I can taste that stuff from 50 yards away (5) over fermentation. Some fermented chile sauces end up tasting more like cold vomit instead of chiles:eek::eek::eek::laugh:.
As for "cooling agents", it's a common error to believe that ice water or cold beer will do the trick. True for the first 30 seconds, but the active enzyme in chile peppers is capsaicin, which is NOT soluble in water, but is soluble in oil. The "lager"effect is that you swallow a huge gulp of beer, and swish it around your mouth. That only spreads the capsaicin all around your mouth. The best cooling agents are milk-based; milk or yoghurt. You might want to consider Lassi as an option; basically, half water, half yoghurt, with a touch of honey or sugar, or mixed with mango, peach, pineapple, etc.

I'm well aware. I want to provide options. Beer and wings are like a perfect marriage lol.

Bread actually works best for me! Since I don't want to kill anyone. This is supposed to be a fun event that my DIL has been wanting to do. I'm going to have 10 plates. I will apply the sauce to the plates. Then let each participant dip their own chicken into the sauce. This way they can choose how much they want to punish themselves.

5 of the 7 of us are big fans of hot sauces. I have a friend in southern Texas that makes it himself. He extracts the oils from the peppers, then mixes it with whatever other ingredients he chooses. They are all fantastic with a blend of flavor and heat. My favorite was a jalapeno/habanero/cranberry hot sauce!
 
Even though I am not a fan of hot sauce, our kids are fans. Really love this idea - might even steal the idea for later this year when the family is all together. I don't have anything to add but to say "Kudos" to you pulling together what sounds like a fun event for the family. Looking forward to hearing the outcome.

It will be fine for the early rounds.

I think ice cream, ice cold milk, yogurt, and bread will be the main stays!

I have a friend that does video/video editing as a hobby (it could be a career). If he is available, he is going to take some videos and pictures and put something together for us!
