How do I prevent steak from doing this?

I have a greenpan. It's ceramic. Non stick coating is gone.

This is how the pan looks after I cook steak in it.

I put salt and pepper on both sides of my steak.

The pepper goes to waste as it sticks to the pan and burns. This stuck burnt

pepper prevents the steak from searing properly too.

And the steak sticks and forms a brown layer you see.

When Gordon Ramsay does this, none of this happens. What's going on?

Are you joking? And why new pan? Gordon cooks in a Stainless Steel which is notorious for sticking and he doesn't have this issue.
Nope you said the non stick coating was gone.
A stainless steel pan has a polished surface to help prevent sticking, your ceramic pan with “the non stick coating gone” does not so there’s no comparison between the two.

A gallon more oil is an exaggeration but more oil will help.

All pans no matter what they’re made of require a learning curve of how much oil to use to get the best result, especially stainless steel.
Personally I’d just by a better pan.

You don't need a set of pans. Nor do you need stainless steel. Just use a good non-stick frying pan. A lot of cooks use cast iron but I wouldn't recommend it for a novice cook.
