How do you use plantain?

At that color, you can also slice them very thin on a mandolin, think not super thin potato chip thin, but not much thicker either, fry, and serve with mojo as a dip. The place we first had them like that sliced lengthwise, but I've also sliced on a sharp bias. They served them instead of bread for the table.

ETA: Duh, didn't realize this was old and I had posted similar answer.
 
I will say this, we were with another couple and the 4 of us went thru the basket in nothing flat. We ordered another basket, first was a freebie, had to pay for any more, and the second basket got eaten too, though not as fast. Can't eat just one!
 
When I wrote Super thin, i meant like those Lays chips that are not much more than paper thin. The plantain chips we had were just a little thicker than that. Just wanted to clarify.

As KK wrote in the other thread, your tostones looked right. I'm not particularly fond of them, though Craig likes them, because of the texture. I prefer the chip like ones or totally ripe (black).

I want some that are crunchy so I got a couple more today. I can't find any totally green ones. This is what I found today.

Those look more like bananas... :laugh:
They're ok colour wise. Just cut them as thin as possible ( a mandoline would be perfect) with a sharp knife and deep-fry until golden brown.
