How to cook Ghormeh Sabzi (Iranian Stew)

Ingredients (for 2 people) :chef:


1- Two slices of lamb
2- Medium grated onion
3- One bunch of spinach
4- Three bunches of parsley
5- Two bunches of leek
6- One cup of red kidney bean
7- One bunch of coriander
8- One tablespoon of dried fenugreek
9- Two tablespoon of oil
10- One tablespoon of turmeric
11- Salt
12- Black pepper
13- Two black limes (dried limes)

Wash the herbs then dry and chop.
In a medium pot, sauté fresh herbs in 4 tablespoons of hot oil for about 15 minutes, while stirring occasionally. Then set it aside.
In a medium pot, fry an onion in oil for about 5 minutes, until it is golden brown, add the meat, pepper, salt and turmeric to the onion and fry for about 5 to 10 minutes, then add the red kidney beans, the fried herbs and the black limes to the mix.
Cover it with water and bring it to a boil on high heat. After it begins to boil, lower the heat.
After 2 hours, taste it and add salt or pepper if needed.
Add verjuice half an hour before the stewing is done.

How to cook rice (Kateh)

Ingredients (for 2 people) :chef:


1- White rice (2 cups)
2- Butter (100 grams – 0.22 pounds – 3.5 ounces)
3- Salt (1 tablespoon)
3- A little saffron

At first wash the rice with cold water, then pour rice into a medium pot, and then add butter and salt to the mix. After that add water (one inch higher than the rice level in the pot) and put it on high flame. The lid should not be on the pot. When the water is completely boiled out, put the lid of the pot back and reduce the flame. After 20-30 minutes the rice is ready.

To make it look beautiful, mix the saffron with 2 ice molds and 3 tablespoons of the cooked rice. Pour the saffron mix on the rice before serving.
