My favorite potatoes and red and yellow. I don't usually peel the baby ones. DD doesn't like skins in her mash.

I'm hoping to have another load of purple potatoes this year. We grew them last year and they were excellent. They have a higher mineral and antioxidants level than regular potatoes and watching people's reaction to purple or blue mashed potatoes is great! :giggle:

Most were solid purple ask the way through, only I can't see those photos right now, so this will have to do.

These are a different purple variety.

I like to get a bag of the mixed baby red, yellow and purple potatoes when available. I've never made mashed with the purple, but I have roasted them and used them in stew.

The purple color is shocking at first.
