Recipe Inspired Vegan Tacos in Lettuce wraps

These delightful tacos are both healthy and delicious. All the ingredients are Vegan (even the cheese).

Ingredients
8 oz organic tofu (extra firm)
1 tbsp spicy mustard
1 medium onion (minced)
2 tbsp fresh cilantro (chopped)
1/4 cup olive oil
1/4 cup hot sauce (your choice)
2 tbsp homemade taco mix (see video)
1 tbsp balsamic vinegar
4 oz Vegan cheese (Cheddar, Mozzarella, or Colby)
1/2 cup cucumbers (chopped)
1 cup tomatoes (petite diced)
1 head organic romaine lettuce (for shells)

Method
  1. Cut tofu into small cubes. Mix tofu cubes, mustard, hot sauce and vinegar in a bowl. Make sure it is well coated.
  2. Heat oil in fry pan on high. Add onions. Cook and stir 30 seconds. Add tofu mixture. Cook and stir 1 minute. Add fresh cilantro. Cook and stir 30 seconds. Add taco mix and 1/2 cup water. Cook and stir 3-4 minutes or until mixture thickens. Remove from heat.
  3. Place 2 romaine leafs on a plate. Begin with adding tofu meat mixture. Top with diced tomatoes and cucumber bits. Finish off with some vegan cheese shreds.

  • Organic Pinto beans
  • Fresh avocado slices
  • Vegan sour cream
  • Organic taco sauce

Wow. This looks tasty, and I know it's healthy from the ingredients. Is there a brand of vegan cheese that you recommend?
Yes. I have only sampled three different manufacturers so far. My conclusion: None of them make a good Cheddar cheese. Daiya makes a decent Mozzarella cheese (which is what I used in this recipe). But Daiya makes a great feta cheese.

In a recent article entitled "We Tried 19 Vegan Cheeses—Here Are the Ones Worth Buying", CookingLight chose NONE when it came to the category of shredded cheese. It would appear everyone hates Vegan shredded cheese. :roflmao:
