Ingredients:
1kg goat meat (bone on) chunks
1 large onion chopped
1 carrot sliced
2 stalks celery sliced
1/2 fennel bulb sliced
4 cloves garlic squashed
2 tbsp tomato paste
1 large handful sage leaves
10 dried juniper berries ground with a little salt
1 cup red wine
1 bay leaf
Salt and pepper to taste
Olive oil
Lemon wedge and parsley to serve.

Method:
In a casserole dish brown meat on the stove top in batches in a little oil. set aside. Soften onions in a little more oil, then add carrots, celery, fennel, and bay leaf and saute a little longer. Add tomato paste, sage, and juniper berries and saute another minute or two. Add red wine, salt and pepper to taste, then add goat back and stir through. Place in a oven preheated to 150 degrees celsius and cook for at least two hours. Add water as cooking if needed (I didn't need to). Serve with fresh parsley leaves and a good squeeze of lemon.
