I'm in the market for some new kitchen shears since I've decided that mine are a bit rubbish. They've got this dead area where the lower blade has this inexplicable 'Nike swoosh' cut-out near the fulcrum that means no cutting can take place on that part of the blade. Plus, they just don't seem to cut very well - yesterday I was trying to cut a chicken in half and it took so many 'snips' with me almost having to use both hands to get through its back ribs...

Pls show what you have and any recommendations.

Is the cut out for cracking crab claws/ lobster claws maybe?

No I don't think so. Shears with cracker functionality have that between the handles I think. It must be something to do with being able to 'get under/inside' some kind of cavity but I haven't found it useful.
 
I've had mine, 2 pairs, for well over a decade. That notched out part, at least for me, cracks through bones quite well. Mine also come apart easily for cleaning. You can tell how old they are by the handles. I've even redipped the handles once...

It's for cracking shells and bones.

The bumps/ridges on the handles are for opening things like above.
 
I believe the notch is for a firmly gripping bones while you cut with a knife.
I do have some but don’t use them, I prefer a knife.

If I want to spatchcock a chicken I put the chicken spine side down, slide a big knife inside along inside next to the spine and press down firmly.
It’s fast and there’s no cutting needed and no need to completely remove the spine, which is good if you’re hands aren’t that powerful.
Once you’ve pressed down to flatten it out you can’t even tell it’s still in.

For anything else I get the hacksaw out.

Edit: apparently it’s called a bone notch or serration grip.

I’m certain I’ve seen dragon riot shears before and they were very well reviewed.
Could be just the thing for Moss.
