Kitchen Shears

I have standard classic Wusthof shears - they do come apart for easy cleaning, but I wouldn’t buy them again (though they’re only $25US).

They cut fine and all that, but see those little nodules on the insides of each handle? I’ve been pinched by those more than once.
 
Totally agree here. I've got this one and I keep it sharp enough to shave hair off your arm! Bones are *no problem*. View attachment 128475

I ended up using my cleaver on this fella and will do birds like this going forwards. You can see I need a bit more practice as it was a bit skew-whiff with one half much bigger than the other!

I'll still be getting some new shears though.

With my cleaver I just put it where I want to cut and press/rock it to the cutting board. One push is all it takes.
 
I think I may have been unduly influenced by Moss, this forum and the clever little targety algorithmy thingys.
I can’t make up my mind whether I’ve done a good thing or I’m a mug 😂

The ‘here have some money off the thing you looked at a while ago’ trickery happened and mistake number one - I was drawn into looking again. Mistake number two I thought about how many pairs of kitchen scissors I’ve gone through that aren’t strong enough or sharp enough and mistake number three because I have lots of jobs I don’t want to do I spent time examining all the photos of all the different colours too closely and noticed these shears come apart and the main blade can be used as a knife (see middle right pic).

Mistake number four, I thought about how much damage I do to my main knife cutting through bone and how a knife dedicated to the task would save it’s edge.
Add that to these being recommended on this forum and it only being £20 and boom I ordered them. What a mug 😂
Still I have a suspicion I’ll love having large super sharp shears, I use scissors in the kitchen a lot.
Fingers crossed I move from mug to ‘what a fine buy that was’ soon 🤣

Those look good! You got the 1 day delivery? Just time to get a chicken and do a quick review lol! I might get those; 22 quid including shipping here (I haven't got Prime anymore).

The shears arrived and I thought Hmm are these fake? Because the slightly shabby box doesn’t say Dragon Riot just ‘Monster’
So I googled it and it seems they’re legit, there are plenty of reviews and even youtube has bit’s n pieces on them.
They dishwashered well with no marking or suspicious rust spots which I always think is a good way to spot fakes.

I asked Mr SSOAP to pick up a chicken when he was in the supermarket ready to test them out. I didn’t have high hope as I have tendonitis in my thumbs and scissors especially sprung loaded ones are my hands nemesis.
How wrong I was, the spring is gentle and helpful.
They are simply fantastic.

Easy to disassemble and reassemble for washing -

Took approximately 5 seconds to cut down each side of the spine. I was amazed, even though scissors or shears for spatchcocking a chicken is something I’m not familiar with doing, the back bone was out clean in well under a minute (probably about 30 seconds) and that includes the faffing about checking where I was cutting.

I have known for a while that cutting this piece of cartilage (see green arrow) makes the chicken fall open (so there’s no need to try crush it to get the breast bone to give) but a knife just isn’t good at cutting this.
These snipped though it like it wasn’t there. This meant no uneven break so no lopsided spatchcock.

Thing is it was so fast to do I wasn’t really satisfied, I wanted more! So off with the legs and wings to see how it coped with joints and thicker more solid bone.

Exceptionally well was the answer. It was so easy and so fast I was quite taken aback, all the cuts were very clean with no bone splintering.
To be honest it was so quick I wanted to cut still more but as I’ve just been watching Dexter I decided to leave it there 😂

It’s in the fridge brining for tomorrow’s Sunday Lunch.
I’ve left the crown whole as I want to see how well they’ll cut cooked bone (how clean the cut is etc) so I’ll split that tomorrow.
On their first outing alone I really like them.

I often would like to cook chicken breast on the bone but even if you can get a crown they tend to be the same price as a whole chicken! And the individual breast on the bone seems to have disappeared from the shelves.
I think this might up my Sunday dinner game because a couple of crowns can be cooked far more gently than a whole chicken.
I’ll also have the legs left for another dish. Bargain.

I’m already absolutely set on getting some for Spain!

Obviously I have no idea how well they’ll do over time but they feel promising.

They appear sturdy and well made. Is there a number indicating the grade of steel stamped on there anywhere? It's likely small and generally close to the pivot point.View attachment 128964
It’s in the dishwasher at the moment.
But I doubt it. For £20 I expect it to turn up and hope it might work, I don’t expect it to be of any particular grade.
Unless maybe ‘CC’ is a grade?
As in cheap as chips 😂
