Ingredients:
2 spring onions (green onions), chopped
1 medium tomato, diced
2-3 fresh chiles (or to taste)
1 cm piece of ginger
1 clove garlic, peeled
Chopped coriander leaf AND stalks
3-4 generous tablespoons peanut butter
A small piece of lemon zest OR 1 stalk lemongrass
1 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame oil
2 tsps sugar
1 tsp salt
Water if needed
Method:

Method:
- This is an extremely complicated recipe, so pay special attention.
- CAREFULLY place all the ingredients in a blender or food processor IN ORDER.
- Turn on the blender/processor and blitz to oblivion.
- In a small pan, warm the peanut sauce through, as this will eliminate the "raw" taste of the onion and garlic. You can use it cold, however.
- Serve over your favourite pasta.
