Lemons..... help required

we have 2 lemon trees bearing fruit now, I normally freeze lots of the juice in ice cubes then put in a big plastic bag for the freezer. Great with my gin. Last year I was at an all you can eat place and I don't normally eat dessert but as it was paid for I tried a lemon cheesecake. It was the best I've ever had.
Does anyone have a tried and true recipe, I know I can giggle but that's normally hit and miss.
And also I've always fancied lemon curd! I'd like any easy recipes on that as well please.

Lemon curd muffins. Not too much curd though - be like chewing toffee, as I should know... :oops::oops::oops: And for gawd's sake, don't mix lime curd with it: you'll probably need a jackhammer... :eek:

I think I have a recipe posted around here somewhere. I like to use lemons and limes to make a citrus marinade. I mainly use it on chicken and pork chops.
