Recipe Lomo Saltado - Peruvian Pork Loin Stir Fry

This dish is a fusion of Latin and Asian cuisines. Basically it is a stir fry made up of meat, sofrito and soy sauce. It is usually served by Peruvians with fried potatoes as I have done here.

Ingredients

1/2 of a pork tenderloin cleaned of silver skin and cut into strips
1 large onion sliced
1 bell pepper sliced. In the image I have used a half red and half green pepper. No it's nowhere near Christmas time
1 large tomato cut into wedges
1 tsp chili powder
1 tsp cumin
1 chili pepper of your choice depending on the amount of heat you prefer
1 glug of soy sauce (not sure what you think a glug is but I'm not telling)
1 tbsp vinegar
4 cloves garlic
salt, pepper, garlic powder to taste

Instructions

It's a stir fry so put your wok to use. Add some cooking oil and heat the wok. Appy salt, pepper and garlic powder to the tenderloin and add it to the wok. Stir fry it until it is about 1/2 done, remove it and set it aside. Put everything else in the wok and stir fry it for about 3 minutes. Return the tenderloin to the wok and stir fry for another 3 minutes or so. Serve with fried potatoes. Recipe serves 4

Very good and quick to make. I love the idea of serving a stir fry with fried potatoes rather than rice or noodles.
