Some local rice or cassava gummy snacks that I want to try my hand at making myself, use this particular ingredient for that crucial gummy texture.

Lye water can also be used in boiling bagels, to give the crust of a bread a very rubbery texture.

My problem is that... for whatever reason, I cannot find it anywhere. The people who stock the shelves at the grocery stores have no clue what I'm talking about, even though I ask for this item in two languages.

I'm also afraid that if I ask for the wrong thing, because this would be my first time cooking with this ingredient, I might accidentally be making and eating particularly caustic soap.

I don't suppose that anyone knows an easy way to make this? There was one recipe for lye water that I came across that involved soaking ashes of something or other that's been burned, but I don't know if I could keep that entirely hygienic...
