Ingredients.

  • 750 gm potatoes
  • 2 tbls olive oil
  • 1/2 tsp cumin seeds
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp turmeric
  • 1/4 tsp pureed or ground ginger

Method.

Peel or scrub the potatoes and cut into 25mm cubes. Boil in salted water for 4 minutes. Drain and allow them to cool. Place the potatoes in a bowl and sprinkle over the masala spices and the olive oil. Mix until fully coated.

Place the potatoes on a tray and bake in the oven at 220 degC for 25 minutes turning as required.
