A bit healthier take on mashed potatoes. The cauliflower will not get as smooth as just potatoes, as can be seen in the picture. You can use all cauliflower or a mix of cauliflower and potato, which makes a smoother and more substantial mash.
Steam chunks of cauliflower (and potato if using) until tender. Place into a mixing bowl and add appropriate amounts of butter, milk or cream, salt and pepper and mash until smooth. Serve.
ETA: I use 2 parts cauliflower to 1 part potato.
ETA again: I steam the cauliflower so that it doesn't absorb any more water. Cauliflower has a lot of liquid in it already and, if you add more by boiling, the mash ends up feeling and tasting watery.
