Every second home here has mint growing in the garden, mines around the side of house that has no sun. So I've left mint to grow along with horseradish.
Wife picked a bunch of it so I made sauce. We get through about 3 or 4 litres a year, I have it with lamb. Roast chicken and mix it in my cabbage. I almost drink it.
It's so simple
1 litre water
1 litre malt vinegar
1 cup,of sugar, boil 5 mins with the chopped mint and bottle.
I got 7 bottles.

I might come looking for this coming up to Christmas time. Any jars of mint sauce I can find in the supermarkets have citric acid in them - a no-no for me. I don't think I'd make quite as much as you have, Russ.
