Mudbugs (crayfish)

I can't find all my pics either. I'm sure I had pics of them coming in the cooler, purging them and putting them in the turkey fryer.

We got fresh water cray fish here in some of the rivers and lake.
It's a very invasive species and got introduced by a fish farmer who didn't realise these creatures could and would walk away.
I like eating them though.

The only sort I can buy here are tiny, already shelled and cooked. But they look very pretty. This was a tart I made:

I've never seen butter on crawfish like that, not to say that butter isn't liberally used in sauces for other dishes.

The problem with ordering mudbugs via FedEx, is you need to order a blank-ton of them


But so worth it for something I never had/did before.

You can tail them (leaving shells on) and freeze the tails in portion size bags. We used to do that all the time when I'd bring back 70-80 pounds that I'd pick up on my way home from my daddy's in Mississippi. I figured out the shell on freezing method after picking my half of that amount, with sore fingers after.

We've ordered same day airport to airport before but we live outside a large city so it's a direct flight. And it is definitely more cost effective to order a lot. Now though, we can get bags at a restaurant supply, so, since they order so much, it's cheaper that way even with their mark up.

I don't put it directly on the crayfish but I generally have a bowl of lemon butter for dipping.
