Mudbugs (crayfish)

The only sort I can buy here are tiny, already shelled and cooked. But they look very pretty. This was a tart I made:

The problem with ordering mudbugs via FedEx, is you need to order a blank-ton of them :laugh:


But so worth it for something I never had/did before.

You can tail them (leaving shells on) and freeze the tails in portion size bags. We used to do that all the time when I'd bring back 70-80 pounds that I'd pick up on my way home from my daddy's in Mississippi. I figured out the shell on freezing method after picking my half of that amount, with sore fingers after.

We've ordered same day airport to airport before but we live outside a large city so it's a direct flight. And it is definitely more cost effective to order a lot. Now though, we can get bags at a restaurant supply, so, since they order so much, it's cheaper that way even with their mark up.
