  • Coconut desiccated/flour 1/2 cup
  • Xanthan gum 2 tsp
  • Hung curd/Greek yogurt 2 tbsp
  • Water warm 1-2 tbsp
  • Oil/ghee for frying

Instructions

For Keto Puris:

  • Take a non-stick pan, place it over a medium flame, and add ghee/clarified butter to it.
  • Once warm, add the almond flour and stir for a few minutes.
  • Now add desiccated coconut or coconut flour (whatever is available). Keep roasting it for 2-3 minutes until it turns golden brown.
  • Add hot boiling water and stir well till it absorbs all the water.
  • Next, add cardamom powder to add flavor, along with stevia (as a sweetener). Keep cooking for 1-2 minutes.
  • Remove from the stove and serve hot.

For Keto Puri:

  • Add almond flour and coconut flour (or desiccated coconut) in a large mixing bowl along with 2 tbsp hung curd and 2 tbsp xanthan gum (for binding). Mix well
  • Now, add warm water to the mixture and knead well to form a soft dough. Keep it aside for 10 minutes.
  • Grease your hands with ghee or oil and knead the dough again.
  • Start greasing parchment sheets.
  • Put a small portion of the rounded dough ball over a parchment sheet, put another sheet on top, press the dough ball to flatten it, and start rolling it with a rolling pin.
  • Remove the parchment sheet on the top and take a small bowl to cut the flattened dough into a perfect round shape.
  • Repeat steps 4, 5, and 6 to make as many puris as you want.

Cooking Keto Puris:

  • Heat oil in a large pan and fry puris one by one until they fluff up nicely.
  • Repeat the process until you cook all your puris.
  • Serve hot with Keto Halwa.
