Recipe NOLA Style Red Beans, Sausage and Rice

Thank you for this challenge. It has been a long time since I made Red Beans and Rice. I forgot how much I love this wonderful lowly dish.

INGREDIENTS

1 LB dried red kidney beans
1 lb andouiille sausage - 1/4" slice
1/2 cup small diced smoked pork tasso
2 cups diced yellow onion
1 cup diced celery
1 cored, diced bell pepper reserve 1/2
2 cloves garlic - smashed and minced
1 Jalapeno - cored and minced reserve 1/2
2 bay leaves
2 TBSP EVOO
2 TBSP Butter
6 cups + chicken stock
sea salt
fresh cracked black pepper
Tabasco

Steamed long grain white rice

METHOD

Wash the beans and soak over night.

*** I sped things up by soaking the beans in hot tap water for 4 hours. Changing the water every 1/2 hour.

I used a #10 cast iron dutch oven. A heavy bottom stock pot works well.

Heat EVOO and butter.
Saute trinity and jalapeno until soft
Add garlic
Cook until just fragrant
Add andouille and tasso
You want to sweat the sausage not fry it. If there is not enough liquid add a couple of TBSPS of stock
The sausage will plump up but not brown.
Add water softened, drained beans.
Cook for 3 to 5 minutes stirring constantly. This gives the beans a flavor boost. Do not let the liquid evaporate.
Add 6 cups chicken stock and bay leaves
Bring to a boil uncovered.
Reduce heat to low.
Cover and simmer for 3 to 4 hours
Stir occasionally. Add more stock if needed.
When beans are tender use a slotted spoon and remove 1/4 to 1/3 of the beans.
In a bowl smash the beans to a paste with a fork
Return the bean paste to the pot.
Taste
Add sea salt and fresh cracked black pepper to taste
Add reserved bell pepper and jalapeno
Cook for an additional 30 minutes
Taste again and adjust seasoning
remove bay leaves
Serve over long grain white rice
Add 3 or 4 drops of Tabasco
You can also add thinly sliced scallions.
Serve with skillet baked corn bread and greens.

NOTE: I am not a big fan of Tabasco. Too much vinegar for my taste. There are two dishes that MUST have Tabasco. Raw oysters - 1 small drop of Tabasco and a spritz of lemon juice. Red Beans and Rice must have 3 or 4 drops of Tabasco.

Your beans should be swimming in a creamy broth. The creaminess requires 2 things - animal fat (andouille) and beans smashed into a paste. If you make this without the sausage you will not get the creamy texture even with the bean paste. You will have a nice red bean soup.
