Recipe Oat Cakes

Here is the recipe for Oat Cakes. It was my dear Mum's recipe so the quantities are in ounces. My hubby loves these with cheese. They are really easy to do but you must make sure they don't get overcooked and burnt. I check them after 20 minutes to make sure.

Ingredients
4 oz oats
4 oz plain flour
2 oz melted butter (or marge)
Milk to mix
1 tsp salt

Mix together the melted butter, flour, oats and salt. Mix in just enough milk to bring the mix together into a very stiff dough. Roll out on a floured surface to 1/8 inch thick and cut into rounds. Bake at 170C for 25 to 30 mins.

This is similar to something I do. But mine has added Baking Powder and a bit more butter. Perhaps they don't need the B.P.? After all, it is a biscuit not a cake (even though they are called Oatcakes!)
