I based the recipe on one that was thought me on a Thai cooking course in Chiang Mai (too long ago, I wanna go back)
The little booklet I got there is called "classic home cooking"
Ingredients:
100 gr pork or belly pork, thin slices (I like to use belly pork or even bacon bits)
1 tsp vegetable oil
1/2 cup water
1 tsp white sugar (I use rock sugar, and less than a tsp)
1 tsp fish sauce (I use more)
50 gr green beans, cut in 2 cm pieces (I use about the same weight of green beans and meat, but you can go whichever way)
2 kaffir lime leaves, stem removed and cut in half (I use much much more, remove the vein and slice thinly)
1 tbsp red curry paste (adjust to taste, I tend to use more)
extra:
I like to add tamarind "juice" or lime juice
Heat oil, fry paste and once fragrant add the pork*
Fry for about 5 minutes
Then add the water and cook (simmer) for another 5 minutes
Add sugar, fish sauce, kaffir lime leaves and beans (and tamarind juice, if using) and cook till the beans are "done"
Taste and adjust when necessary
Be careful with the fish sauce, add a little less than you think you need. You can always add more
Serve with white rice
*when using bacon or belly pork, I prefer to start with is over low heat till the fat renders, then add curry paste etc
