Pan-frying cheap fish?

I'm buying frozen Alaskan Pollock fillets, every supermarket sells them and they are the cheapest fish , not great flavour but not bad if you marinade them, how do i pan fry them without them falling to bits or going soggy ?



I'm cutting out deep frying and battered fish now, it was not doing me any good.
 
Pollock is a good fish. Similar to cod in some ways.

If you are pan frying them then let them defrost first. Then pat dry with kitchen paper. Fry very gently for a few minutes. Turn gently to fry the other side or simply cover with a lid and fry a few more minutes. The key is to fry gently and for a short time.

You could steam them instead.
 
Do you like nuts, I usually dip my white fish like halibut in egg yolk and coat them with nuts, maybe a tiny bit of flour, then pan fry.
It’s harder to marinate when they come from a freezer. But I never try.
 
Lemon and butter is also a good combination, if you are not avoiding butter for whatever reason. For me, I don’t season my fish,I i let the salted butter do the seasoning.
