Recipe Pavlova

4 egg whites
Pinch of salt
200 gms sugar
1 tbsp cornflour / cornstarch
Juice of 1 lime / 1/2 lemon
200 gms whipping cream
1 punnet (around 2-300 gms) fresh strawberries

  • Heat the oven to 200F.
  • Beat the egg whites together with the salt until they form soft peaks. Add the sugar little by little until the peaks become firmer.
  • Now add the cornflour and the lime juice and keep beating until the mixture is smooth, without any undissolved grains of sugar.
  • Cover a baking sheet with greaseproof paper and make a large circle with the egg mixture.
  • Bake until the meringue begins to brown, about 60-75 minutes. *
  • Leave the shell in the oven to cool.
  • Once the shell is completely cooled, remove from the oven and place on a large plate.
  • Beat the cream until soft peaks form, then cover the meringue with the cream.
  • Wash the strawberries, remove the green stalk end, and cut in halves.
  • Decorate the cream with the strawberries, working in circles from outside to in.
*This timing seems to vary with each oven, so I suggest keeping an eye on the meringue as it cooks.
