Recipe Peas and smoked bacon

Peas and bacon is very easy to prepare and is always an enjoyable side dish, a perfect match with meat dishes or even potatoes or carrots dish, but is also very good on its own.



Serves 2, Preparation time 10 minutes, Cooking time 25/30 minutes

  • 200 g. of frozen peas
  • 1 chopped shallot
  • 1 chopped carrot
  • 50 g. of cubed smoked bacon
  • 4 tablespoons extra virgin olive oil (EVOO)
  • salt and ground black pepper to taste
  • a glass of warm water to taste
  • half vegetable stock cube
  • some leaves of fresh basil


Method

Fill a glass with hot water and melt it in half vegetable stock cube.

Cut into the cubes the carrot and even the bacon. In a saucepan soak in the oil for a few minutes the chopped shallot with chopped carrot.

Then add the bacon cubes. After 4/5 minutes, add also the peas, combine the glass of hot water with the melted stock cube, add a pinch of salt and black ground pepper and mix.

Cook the peas on low heat and with the lid for about 25/30 minutes.

At the end of cooking, add some basil leaves, remove the lid, dry the liquid and serve your side-dish.

Do you use packaged bacon or do you purchase panceta at the Market from a Charcuterie Kiosk ?

The last line should read: Drain the liquid ( not dry the liquid ) ..

1st line: Crumble the vegetable stock cube into a glass of very hot wáter, so that it dissolves.
