Recipe Pistachio Salad Dressing

Pistachio Salad Dressing:

Ingredients:

1) Pistachios - 1/4 Cup
2) Cream Cheese - 2 Tblspns.
3) Lime Juice - 3 Tblspns.
4) Half N Half - 1/2 to 3/4 Cup
4) Cucumber - 1/4 of a Large Cucumber
5) Sweet Basil - 1 Tspn.
6) Black Mustard Seed - 1 Tspn.

NOTE: Add Water to make thinner. The result of the above ingredients will be a thick creamy Salad Dressing.


Procedure:

1) Pulverize Pistachios into Powder or Flour.
2) Dice Cucumber
3) Combine all ingredients in a blender and puree.
4) Bottle and Refrigerate for later use.
5) Allow to set for approximately 48 hours before first use.

The Pistachio Salad Dressing is definitely on my list of things to do again. First test spoonful was awesome.

How would the dressing taste, if I would use gorgonzola or roquefort instead of the cream cheese? Stay healthy

It's a quick recipe. Give it a small amounts test evaluation. There's nothing to cook, just mix things together.

I think it would work very well - the mineral almost metallic tang of blue cheese with sweet pistachio. Its giving me ideas!

I chose Cream Cheese because it is subtle and struck me as not masking, but still, supporting the soft flavor of Pistachio. The amount of Pistachio I used was tailored to allow it to have an impact. It's also why I chose the subtlety of Cucumber for more liquidity.
