In Portugal, tomato rice is a creamy, brothy rice that usually goes with fried fish. It is usually made with Carolino rice, a portuguese variety of rice that is supposed to be similar to Italian Arborio rice, it's a shorter grain rice. You can use any other rice variety for this side dish though.

- 1 cup Carolino rice
- 600g tomatoes, peeled and pureed (I use fresh tomatoes but you can use canned)
- 3 cups boiling water
- Salt to taste
- Optional: minced onion, minced garlic, half 1 red or 1 green bell pepper, thinly sliced

If using peppers, onion and/or garlic: Add a bit of olive oil to the pan and sauté onions, garlic and bell peppers until soft.
1. In a pan, add the pureed tomatoes and salt, in medium heat cook until thickened a bit.
2. Add the boiling water and mix.
3. Add the rice and let it cook for 10 minutes or until fully cooked.

Enjoy it with fried fish.
