Princess Potatoes (Prinzesskartoffeln)
Makes 6 servings

Ingredients
5 or 6 medium potatoes, boiled
2 slices Canadian bacon, diced
2 TB onion, chopped
2 TB butter
1 TB flour
1-1/2 cups milk
Salt and pepper (white or black)

Directions
While potatoes are cooking, in a separate pan, cook bacon and onion in butter until onion is soft.

Add flour and cook 1-2 minutes, stirring constantly, then whisk in milk and simmer until sauce is thickened and smooth.

Cut cooked potatoes into 1/2-inch dice and add to sauce. Season to taste with salt and pepper and serve.

Note: for added decadence, add an ounce or two of shredded Swiss cheese.

Looks fantastic. I have back bacon, and cheddar cheese in the fridge. I may use that this week. Thank you so much for the inspiration.
