Here's a simple recipe for autumn breakfast muffins I made. It's an ideal way to use up some apples that are getting old.

What you need:
115 g butter
115 g self raising flour
115 g caster sugar
2 eggs
3 small apples of your choice (kid sized). Peeled, cored, and grated.
1 tsp pumpkin spice mix
A few drops vanilla essence
A pinch of salt
A 12 muffin tin prepared with paper muffin cups

1) Preheat oven to 180*c upper and lower heat. Cream the butter in a bowl with the sugar and the spice/vanilla/salt. Then add the flour.
2) Add the eggs to the mixture, and once that's mixed in well, add the grated apples. It makes for a shiny, slightly drippy batter.
3) Drop the mixture into the muffin cups with a spoon, trying to divide the mixture evenly
4) Put tin in the oven and bake for 25-30 mins. When the muffins are golden brown, they are ready. Take out of the oven and let cool for at least 30 mins.

They are supposed to rise like this, it's very little batter and mainly apple.
