Quinoa Mango Breakfast Pudding:

Ingredients:

1) Quinoa, white - 1/2 cup
2) Mango - 1/2 cup
3) Banana - 1/2
4) Granola - 1/8 cup
5) Half n half - 1/8 cup
6) Cream cheese - 1 tblspn.
7) Almonds - 3 tblspns.
8) Sugar, brown - 1 tspn.
9) Cinnamon - 1 tspn.
10) Water - as required


Procedure:

1) Wash and rinse the quinoa.
2) Boil the quinoa in twice as much water.
3) Lower the heat and cover to allow the quinoa to steam and puff.
4) Allow the quinoa to cool.
5) Dice the mango into small pieces.
6) Crush the almonds.
7) Blend Half n half, cream cheese, banana, sugar and cinnamon.
8) Mix all ingredients.
9) Spoon into serving bowls.
10) Top off with additional cinnamon, crushed almonds and mango.

I love mango. Quinoa is so versatile, I can see how this works quite well with the other ingredients. Good job!
