Radish Cucumber Soup:
Ingredients:
1) Radishes - 8 to 10
2) Cucumber - 1/2
3) Garlic, crushed - 1 tblspn.
NOTE: If crushed garlic is not available, crush three cloves.
4) Hominy - 1/2 cup
5) Polenta - 1/8 cup
6) Half n Half - 1 cup
7) Parmesan cheese, grated - 2 tblspns.
8) Cilantro - 2 tspns.
9) Saffron - 1 tspn.
Procedure:
-- Preparation --
1) Blend the radishes, cucumber and garlic into a puree.
2) Cut up the saffron threads into smaller pieces.
-- Cook and Serve --
3) Combine the radish/cucumber puree with half n half in a pot.
4) Cook at medium heat, adding the hominy and polenta.
5) As the soup becomes hot, add the cilantro, Parmesan and saffron.
6) Continue cooking until the saffron colors the soup.
7) Ladle into soup bowls.
8) Serve.
