Recipe Red split-pea dip

This is really easy but delicious

250g red split peas (or lentils), rinsed & drained
1 diced onion
2-3 garlic cloves crushed (or however many to your taste)
600ml liquid **
Lemon juice
Parsley
Olive oil
Salt & pepper

Heat some oil in a pan & cook onion & garlic over low/med heat until soft. Add peas & liquid ** & simmer until peas are soft (20-30 mins)
Cool slightly, season & add lemon juice to taste & chopped parsley. Blend until smooth, adding olive oil until desired consistency

** Liquid
If using water add a couple of bay leaves but remove before blending
Veg stock gives it a bit more flavour
I used poaching liquid from chicken but obvs not for vegan if doing that

Delicious indeed! This is similar to daal here in the UK. The main difference being daal is served hot as part if an Indian meal, usually.
